Smooth Spinach Soup Recipe

Ingredients

Prepare 1 onion, finely chopped; 2 garlic cloves, minced; 500g fresh spinach leaves, washed and stems removed; 1 large potato, peeled and diced; 4 cups vegetable broth; 1 cup milk or cream (optional for creaminess); 2 tablespoons olive oil; salt and pepper to taste.

Preparation

Start by chopping the onion and mincing the garlic. Wash the spinach thoroughly and chop roughly if desired. Dice the potato into small cubes.– 

Sauté Aromatics

Heat olive oil in a large pot over medium heat. Sauté the chopped onion and minced garlic until softened and fragrant, about 5 minutes, stirring occasionally to prevent burning.

Add Potato

Add the diced potato to the pot and cook for another 2-3 minutes, stirring occasionally to coat the potato in the oil and aromatics.

Cook Spinach

Add the fresh spinach leaves to the pot, stirring until wilted, about 3-4 minutes. The spinach will reduce in volume significantly as it cooks.

Add Broth

Pour in the vegetable broth, ensuring all ingredients are submerged. Increase the heat to bring the mixture to a boil.

Simmer

Once boiling, reduce the heat to low and let the soup simmer for 15-20 minutes, or until the potatoes are tender when pierced with a fork.

Garnish Options

Serve the soup hot, garnished with a swirl of cream, a sprinkle of grated Parmesan cheese, or a drizzle of olive oil for extra flavor and presentation. Freshly ground black pepper or a pinch of nutmeg can also enhance the soup's flavor.
